Every batch is artisan-handcrafted and meticulously cared for during a process, called stone-grinding, which takes 24 – 48 hours to complete. Formerly used for turning olives into olive oil, stone-grinding applies pressure with powerful and perfectly smooth granite wheels. Although it is made with an old-world approach, it is revolutionary in the way that it preserves the nutrients and flavor inside the jar because it reduces the amount of oxidation. This natural preservation is accomplished by maintaining a consistently low temperature that stays below 105 degrees Fahrenheit throughout the entire process. This leaves you with a silky smooth texture that truly tastes heavenly.

I have a feeling that this is a very nutritious spread, but it is going to take me a while to appreciate it.  I will try to acquire a taste for it, but it's going to take a while.
